1 Highfield Level 1 Food Safety For Manufacturing This qualification covers. The importance of food safety. An awareness of food safety hazards and how they can be prevented. The importance of personal hygiene. The importance of cleaning and disinfection. This qualification is usually achieved by taking a half-day course.
2 Highfield Level 1 Food Safety for Catering Subjects covered include. An awareness of hazards and controls associated with food in catering operations. Contamination prevention. Temperature abuse of food and the importance of thorough cooking and rapid cooling. Personal hygiene. Cleaning and disinfection. This qualification is usually achieved by taking a half-day classroom-based course
3 Highfield Level 1 Award in Food Safety in Retail (RQF) This qualification aims to prepare learners for employment, or to support a current position within a low-risk role, where there is an element of food handling. This could include stock/store room staff. To complete this qualification learner should expect to undertake 4 hours of learning.
4 Highfield Level 2 Award in Food Safety in Catering (RQF) Subjects covered include hazards and controls, food safety management and temperature controls, food poisoning control, personal hygiene, cleaning and disinfection, food pests, and the role of the food handler in keeping food safe. This qualification is usually achieved by taking a one-day classroom-based course.
5 Highfield Level 2 Award in Food Safety for Manufacturing (RQF) This qualification is ideal for anyone working in the food manufacturing industry or those about to start work in the industry. Learners gaining this qualification will know that food safety is the responsibility of everyone involved in the storage, preparation, processing, packing and handling of food. The total qualification time for this qualification is 7 hours
6 Highfield Level 2 Award in Food Safety in Retail (RQF) This qualification is designed principally for those who work in, or intend to work in, a retail environment where both packaged and/or open foods are available. It is also appropriate for people providing a service; for example, delivery drivers and home delivery employees. The total qualification time for this qualification is 7 hours
7 Highfield Level 3 Award in Food Safety for Manufacturing (RQF) The Level 3 Award in Food Safety for Manufacturing is a qualification aimed at supervisors, team leaders and line managers working in the manufacturing industry. This includes those working in distribution and storage. Learners gaining this qualification will know, and be able to apply, the knowledge relating to the supervisor’s role at all stages of food production. They will understand the role of the supervisor in food preparation and be able to provide examples of effective supervisory management relating to food production. This qualification is usually obtained by taking a 3-day classroom-based course.
8 Highfield Level 3 Award in Food Safety in Catering (RQF) This qualification is ideal for anyone working as a supervisor, team leader or line manager in the catering and hospitality industry. Subjects covered include microbiology, hazards and controls, food poisoning, personal hygiene, premises and equipment, cleaning and disinfection, pest management, food safety management, supervisory management, legislation and enforcement. This qualification is usually obtained by taking a 3-day classroom-based course.
9 Highfield Level 3 Award in Food Safety in Retail (RQF) This qualification is aimed at those working in the food retail industry who are at, or wish to progressto, a higher or supervisory level. To complete this qualification learners should expect to undertake a minimum of 20 hours of learning.
10 Highfield level 4 Award in Managing Food Safety in Catering (RQF) This qualification is aimed at managers working in a food or drink catering environment. The qualification is intended for learners already working in catering, or those who are preparing to work in the industry, and whose job requires them to have some responsibility for food safety. Learners are likely to have management responsibilities for an operational team. This qualification covers the subject of food hygiene at a suitable depth to ensure learners have a thorough knowledge of hazards and controls; the focus is on the importance developing, implementing and monitoring food safety procedures. This qualification is usually obtained by taking a 5 day classroom-based course
11 Highfield Level 4 Award in Food Safety Management for Manufacturing (RQF) This qualification is aimed at managers working in a food or drink manufacturing environment. The qualification is intended for learners already working in manufacturing, or those who are preparing to work in the industry, and whose job requires them to have some responsibility for food safety.
